Why is a hydrofilter for a grill
or oven absolutely essential in a modern restaurant kitchen?
Of
course, you can technically run your restaurant without a hydrofilter.
Meals can be prepared perfectly well in a combi steamer or even on a
traditional stove that was so popular in the last century.
But then your menu will become dull and unappealing to your guests.
Nowadays,
cooking over an open flame has become not only fashionable but, in many cases,
essential for professional kitchens.
Over the last decade, the following types of equipment have become especially

For centuries, or even millennia, food was prepared over fire.
The aroma of fire-cooked meals awakens our deepest instincts and memories.

However,
installing open-flame cooking equipment indoors is absolutely forbidden.
If you simply install a ventilation hood above the flame, you create a serious
fire hazard.
The only
correct and safe way to connect a grill, Josper or any wood/charcoal-fired oven
to a restaurant ventilation system is through a hydrofilter.
Why is a hydrofilter necessary indoors?
No one
would think of running a grill or Josper inside without ventilation -
clouds of smoke and soot on the ceiling would quickly prove the mistake.
But if
you connect a ventilation hood directly to the ventilation system above such
equipment, it may take a few months before you realise it was an even worse
decision.
What happens in that time?
Soot,
grease, and carbon deposits gradually accumulate inside the ventilation ducts - layer by
layer.
Once the layer becomes thick enough, a single spark can ignite the deposits and
set the entire kitchen, and then the restaurant, on fire.
The
problem is that it’s practically impossible to wash out soot and grease from
the ducts on a daily basis.
And since sparks are inevitably drawn into the ventilation when the grill or
oven is lit, a tragic outcome is only a matter of time.
In fact,
in 99% of restaurant fires, the cause is a grill or Josper without a hydrofilter.
What does a hydrofilter actually do?
A hydrofilter
removes smoke, soot, and grease from the exhaust air.
The soot and grease are trapped on a special filtering device inside the unit.
As a result, only cooled, cleaned air with no soot or grease enters the
ventilation system - keeping the ducts perfectly clean.
Our hydrofilters
are equipped with an automatic washing mode.
About once a week, you simply activate this mode and add a cleaning agent.
In
addition to the ceramic filtering system, the hydrofilter features continuous water
circulation, which makes the operation of your grill or Josper perfectly
safe - even if
you forget to clean the unit on time.
Sparks are completely extinguished within the fine mist of water droplets.
To ensure
long-term reliable operation, however, it’s important to activate the
washing mode regularly - this prevents clogging of the
nozzles and other maintenance issues.
