Specialists involved in ventilation systems for restaurants and businesses know what a ventilation hood is and what it is used for.
In simple terms, an exhaust hood is a huge rectangular stainless steel umbrella that is installed above heating equipment and draws in all excess vapours and combustion products generated during the technological process.
Hoods can be island or wall-mounted. To preserve the ventilation system, hoods are equipped with grease traps, because in a professional kitchen, a lot of grease gets into the air.
But when a Josper oven is installed in a professional kitchen, the issues of ventilation and air purification move to another level, because only specialised equipment can neutralise the products of coal combustion. This equipment can also be built into the exhaust hood.
In what cases is a hood-hydrofilter installed instead of a conventional hydrofilter?
In cases where there is a need to make effective use of limited space. The hood-hydrofilter is mounted to the Josper's exhaust pipe, just like a regular exhaust hood.
And the circulation system is disguised as a regular stainless steel work table. Chefs work on the work surface of this table, or some kind of tabletop kitchen equipment is placed there.
This saves a lot of space.
But there is one caveat: an umbrella hydrofilter can only be installed if the ceiling is high enough. This is because it creates a kind of vertical structure:
- the hood on the stand,
- its pipe connected to the hood,
- the hood-hydrofilter itself,
- and the vent to which the hood is connected.
- Therefore, this aspect must be taken into account when choosing equipment.
